Eggplant Parmagiana

I made this for dinner Monday night and it was delicious! I found it in one of my Weight Watchers recipe books and since I had eggplants and sauce that needed to be used up, it was the perfect. It's a hearty meal that is sure to put a smile on any ones face.


Ingredients:
1 cup dried breadcrumbs
1/4 cup plain flour
2 eggs, lightly beaten
1 large eggplant
1 tablespoon olive oil
1 brown onion (chopped)
2 garlic cloves (crushed)
2 x 400g cans diced tomatoes
1/2 cup light tasty cheese (grated)
2 tablespoons grated parmesan

Mexican Tortilla Soup

Hi Guys!

This is a great meatless Monday lunch or dinner, it's full of filling and healthy foods and is a great vegetarian dish.

 
 

Ingredients:
1 can diced tomatoes
1 can corn kernels
1 can four bean mix 
1.5 cups vegetable or chicken stock
1 onion, chopped
1 red chilli, deseed and finely chopped (optional)
2 garlic cloves, crushed
1 tablespoon Olive oil
1/4 cup sour cream
1/2 avocado, finely chopped (optional)
 
2 white corn tortillas
Spray oil

Pumpkin Crustless Quiche

Hi Guys!

I got this recipe in one of the Weight Watchers cookbooks, it's on the page next too my favourite Zucchini slice. I wanted to try something a little different for dinner tonight so I decided that a Crustless pumpkin quiche was on the menu. It was delicious, it reminds me more of a mousse than a quiche but it was very nice. It would also make an excellent side dish to go with a roast dinner.


Ingredients:
1kg butternut pumpkin
250g light/low-fat sour cream
3 eggs
1/4 cup plain flour

Cranberry and Oat Cookies

These are delicious biscuits that are HEALTHY and very simple to make. I found this recipe in an old weight watchers magazine and seeing that each cookie is only 1 pro-point, I just HAD to try them out! They would make a delicious sweet treat for someone with diabetes or a nutritious snack for the little ones whilst they are at school.


 
Ingredients:
1 cup wholemeal self-raising flour
1 cup dried cranberries
3/4 cup rolled oats
2 tablespoons brown sugar
1/2 cup no fat Greek yoghurt
1 egg
1 tablespoon olive oil
