Macaroni Carbonara

Macaroni Carbonara


11 Pro-points per serving, makes 4 serves

This is a great alternative to the cream rich original version. whilst it's lower in points it's still just as tasty and a makes for a low effort but great taste weeknight meal. Serve with steamed vegetables or a simple salad and enjoy!

Ingredients: 

300 grams elbow shaped macaroni
1 Tbsp. Olive Oil 
1 chopped Brown onion
250 gms low fat Bacon, sliced into strips
2 cloves Garlic, crushed (or finely chopped)
1/2 cup Parmesan cheese
2 eggs, lightly beaten

1. Cook pasta until tender, drain and reserve 1/2 cup of boiling water.
2. In a large saucepan, heat oil then cook onion and bacon together until onion is translucent and bacon is crispy. 

3. Add garlic and saute` for 30 seconds or until fragrant. 

4. Add Parmesan cheese and boiling liquid. 

5. Remove pan from heat and add lightly beaten eggs and pasta. Mix until well combined. 

6. Serve with steamed 0 pro-point vegetables or a 0 pro-point salad.
