Zucchini Slice

Hi Guys,

This is another great recipe, that's filled with good stuff and tastes amazing. A great lunch or light dinner idea that is low in pro-points but gives you lots of yummy food to enjoy. Would be great served with a side salad!

 


Ingredients:
3 medium Zucchini, grated
1 large carrot, grated
1 large onion, grated
2 garlic cloves, crushed
1 cup grated low fat tasty cheese (180g)
1 tablespoon Olive oil
1 1/4 cups self-raising flour, sifted
5 eggs (I would suggested using a medium sized egg for this)
Salt & Pepper, to taste

Raspberry Buttermilk Muffins

These are great! they are low in sugar and taste great!, if you are a diabetic these are a great low sugar alternative that don't contain any of that nasty artificial sweetener.


Ingredients:
300g Self-Raising flour
1/4 cup white granulated sugar
1 egg
60g Butter/Canola spread, melted
1 teaspoon vanilla essence
1 1/4 cups buttermilk*
1 cup raspberries

*Note: I make buttermilk by adding 1 tablespoon white vinegar per 1 cup of milk/skim milk (minus 1 tablespoon)

Bacon and Onion Quiche



This is a healthier version of the well known Quiche. It tastes great and it's very quick and easy to make. Most of you might even have all the ingredients in your fridges and pantries.

 

Ingredients:
Pastry-
1 and 1/4 cups Plain Flours
1/2 cup Self raising flour
1/3 cup skim milk1 egg white
2 tablespoons butter or (light margarine)

Filling-
110g lean shortcut Bacon, cut into cubes and sautéed until brown
1 onion, chopped and cooked until translucent
2 whole eggs
2 egg whites
1 cup skim milk
3 tablespoons grated parmesan cheese
1/2 cup grated low fat tasty cheese
2 large garlic cloves, crushed

It's Weigh In Day!

Hi Guys,

I had a super great week this week, and lost an incredible 1.1kgs! Was ecstatic when I saw the result of all my efforts this week.

I think this week I did really well with my food choices, I choose lots of filling and healthy foods, lots of low pro-point vegetable soups, lean proteins. I didn't have any takeaway! Which is amazing for me because I used to be addicted to the stuff, and now let myself have it at least once per week!
