Leek and Potato Soup

 
 
Winter in Australia is now in full swing, it's the right time to cuddle up on the sofa with  a warm bowl of soup, and watch that favourite TV show or read that book that you've been putting off for a while now.

I will be making a video shortly, but my camera has been broken and is in the process of being fixed. So for now, I thought I'd put this up as a great winter meal idea!

Ingredients:
1 tablespoon Olive Oil
1 Leek, chopped and washed
2 Large potatoes, peeled and chopped into 1cm cubes
1 Garlic clove, crushed
4 cups of chicken or vegetable stock (I use 2 chicken stock cubes and 4 cups water)
2 tablespoons fresh chopped parsley

Method:
1. Heat olive oil in a large pot, add leek and sauté until translucent
2. Add garlic and sauté for a further minute
3.Add potatoes, and stock
4. Allow to cook until potatoes are cooked through
5. Use stick blender, or bench top blender to puree (alternatively eat as is)
6. Check for seasoning (salt and pepper)
7. Enjoy!

Raspberry and Almond Strata

 
 

This is a delicious dessert! Its a little creamy, a little tart and a little bit crunchy.

Ingredients:
500g Low Fat Custard (your choice)
300g Raspberries (Frozen or Fresh)
1 Tablespoon icing sugar
40g Bread crumbs
15g White granulated sugar
25g Ground Almond Meal

Baked Sausages with Balsamic Gravy!

Hi Guys!

Another episode of Everything Weight Watchers just loaded on YouTube, and to make a delicious BAKED SAUSAGES WITH BALSAMIC GRAVY all you need are a few simple ingredients! This is a delicious alternative to grilled sausages! Its quick, easy and budget friendly!

Ingredients:
8 x 58g extra lean sausages
1 brown onion (sliced)
1 carrot (thinly sliced or grated)
2 tablespoons balsamic vinegar
2 tablespoons sugar
1 tablespoon plain flour

1 tablespoon Worcestershire sauce
